A 10-Minute Summer Wellness Feast! Easy 'Yeolmu Bibim-Guksu' Made with Tender Young Radish Greens (Yeolmu) and bibigo Kimchi 2026-08-24

Over the past month, we have explored Korea’s wise Zero-Waste food culture—which elevates discarded ingredients into fine culinary delicacies—as well as the vibrant transformations of summer’s iconic green, Yeolmu (Young Summer Radish).

Do you know the literal meaning of 'Yeolmu'? The word Yeolmu translates to "young radish," referring specifically to the tender green leaves and crisp stems harvested before the solid radish root fully develops. It represents traditional Korean culinary wisdom, shifting the spotlight from the underground root to the nutrient-rich, crunchy green top.

For the final week of August, seeing is believing! We have prepared a quick recipe that lets you whip up a refreshing bowl of Yeolmu Bibim-Guksu (Spicy Mixed Noodles) at home in just 10 minutes using store-bought bibigo Yeolmu-Kimchi easily found at local Asian markets.

[3-STEP RECIPE] Easy 10-Minute Home Cooked Yeolmu Bibim-Guksu

STEP 1. Boil and Rinse Noodles for Maximum Chewiness

Boil wheat noodles for 2 to 3 minutes. Each time the water boils over, pour in a cup of cold water to lock in a chewy texture. Once cooked, rinse the noodles thoroughly under cold running water, scrubbing gently with your hands to wash away excess starch.

STEP 2. Mix with Kimchi Broth-Infused Sauce

Prepare a classic spicy-sweet bibim sauce (chili paste, soy sauce, vinegar, sugar, and sesame oil) and add 2 to 3 spoonfuls of bibigo Yeolmu-Kimchi broth. The tangy kimchi juice adds a deep, sparkling umami flavor. Toss the drained noodles into the sauce and mix well.

STEP 3. Top with Crunchy Yeolmu-Kimchi

Transfer the dressed noodles to a serving bowl and top generously with fresh, crunchy bibigo Yeolmu-Kimchi as the hero garnish.
